Ingredients
Base Ingredients:
20 oz cheese tortellini
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1 cup cucumber, diced
8 oz feta cheese, crumbled
1/3 cup red onion, finely diced
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
Herb Dressing:
1/3 cup olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon honey
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
1. Cook the cheese tortellini according to package instructions. Drain and immediately shock in ice water to stop the cooking process.
2. Dice avocados, cherry tomatoes, cucumbers, and red onion into uniform 1/2-inch pieces.
3. In a small bowl, whisk together olive oil, lemon juice, garlic, honey, oregano, salt, and pepper to make the dressing.
4. In a large mixing bowl, combine tortellini, diced vegetables, crumbled feta, and chopped herbs.
5. Pour dressing over the salad and gently toss to combine.
6. Serve immediately or chill for up to 2 hours before serving. Best enjoyed fresh.
