Ingredients
1 lb boneless, skinless chicken breasts
1/3 cup balsamic glaze (store-bought or homemade)
1 tbsp olive oil
1 cup uncooked orzo pasta
2 cups chicken broth
1/2 cup crumbled feta cheese
1/2 cup roasted red peppers, sliced
2 cloves garlic, minced
1/4 tsp dried oregano
Salt and black pepper, to taste
Fresh basil or parsley, for garnish
Instructions
Season chicken with salt, pepper, and oregano.
Heat olive oil in a large skillet over medium-high. Sear chicken for 5–6 minutes per side, until fully cooked and golden.
Brush both sides with balsamic glaze. Reduce heat slightly and let the glaze caramelize, about 1–2 minutes per side. Remove chicken and let rest.
In the same pan, add garlic and sauté for 30 seconds. Stir in orzo and toast lightly for 1 minute.
Pour in chicken broth, bring to a boil, then reduce to a simmer. Cover and cook for 10–12 minutes, stirring occasionally, until orzo is tender and liquid is absorbed.
Stir in roasted red peppers and feta.
Slice the chicken and nestle it over the orzo. Drizzle with more balsamic glaze and garnish with fresh herbs before serving.
