Ingredients
- 2 tablespoons olive oil
2 large yellow onions, thinly sliced
1 teaspoon salt
1 tablespoon balsamic vinegar (optional)
1 pre-made flatbread or naan
½ cup crumbled feta cheese
¼ cup shredded mozzarella cheese
1 tablespoon fresh thyme leaves (or ½ tsp dried)
1 tablespoon honey
Freshly ground black pepper, to taste
Instructions
Heat olive oil in a large skillet over medium-low heat. Add sliced onions and salt.
Cook the onions slowly, stirring occasionally, for 25–30 minutes until soft, golden, and caramelized. Optional: stir in balsamic vinegar during the last 5 minutes for extra depth.
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and place the flatbread on it.
Spread the caramelized onions evenly over the flatbread. Top with feta, mozzarella, and thyme.
Bake for 8–10 minutes, or until the cheese melts and the flatbread edges are golden brown.
Remove from the oven, drizzle with honey, and add freshly ground black pepper. Slice and serve warm.
Notes
Make the onions up to 3 days ahead and store in the fridge for quicker prep.
Substitute agave or maple syrup for honey if needed.
Swap in goat cheese or dairy-free cheese to suit your taste or dietary needs.
Avoid adding honey before baking—it tastes best fresh and drizzled right after.
