Description

Tender cheese tortellini gets a crispy golden crust, tossed with fresh spinach and zingy lemon sauce. The ultimate comfort food fusion!


Ingredients

Scale

24 oz cheese tortellini (fresh or frozen)

3 cups fresh baby spinach

4 Tbsp butter

½ cup grated Parmesan

2 Tbsp olive oil

2 cloves garlic, minced

1 lemon, juiced

¼ tsp red‑pepper flakes

Salt & black pepper to taste

Fresh basil, for garnish


Instructions

1. Cook tortellini according to package instructions until al dente.

2. Drain tortellini and pat dry with paper towels.

3. Heat olive oil and 2 Tbsp butter in a large skillet over medium‑high heat.

4. Add tortellini in a single layer; cook 3 min without stirring until golden.

5. Flip and cook 2 min more until crispy.

6. Add garlic and red‑pepper flakes; cook 30 sec.

7. Add remaining butter; melt.

8. Stir in spinach; cook just until wilted.

9. Remove from heat; add Parmesan and lemon juice.

10. Season with salt & pepper.

11. Garnish with basil and extra Parmesan; serve hot and crispy.

Notes

Frozen tortellini works—just thaw first.

Fresh basil brightens the dish.

Great with grilled chicken or a light salad.
