Ingredients
- Salad:
1 cup orzo pasta
2 cups baby spinach, chopped
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/2 cup canned chickpeas, rinsed and drained
1/4 cup red onion, thinly sliced
1/3 cup crumbled feta cheese
2 tablespoons Kalamata olives, sliced (optional)
2 tablespoons fresh parsley, chopped
- Dressing:
3 tablespoons olive oil
1 tablespoon red wine vinegar
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon dried oregano
Salt and pepper, to taste
Instructions
Cook orzo according to package directions. Drain, rinse with cold water, and let cool.
In a large bowl, combine orzo, chopped spinach, tomatoes, cucumber, chickpeas, red onion, feta, olives (if using), and parsley.
In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, salt, and pepper.
Pour the dressing over the salad and toss gently until everything is well coated.
