For the Chicken & Glaze:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

For the Salad:

  • 4 cups baby spinach
  • 1/4 cup chopped walnuts, toasted
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Make the Blueberry Glaze:
    In a small saucepan, combine blueberries, balsamic vinegar, honey, and Dijon mustard. Simmer over medium heat for 8–10 minutes, stirring occasionally, until slightly thickened. Remove from heat and let cool.

  2. Prepare and Grill Chicken:
    Season chicken breasts with salt and pepper, then brush with olive oil. Grill over medium-high heat for 5–6 minutes per side, or until cooked through. During the last 2 minutes, brush generously with the blueberry glaze.

  3. Make the Salad:
    In a large bowl, toss baby spinach with olive oil and lemon juice. Add toasted walnuts and crumbled feta. Season with salt and pepper to taste.

  4. Serve:
    Slice grilled chicken and place over the spinach salad. Drizzle with additional blueberry balsamic glaze.

Notes

  • For a vegetarian twist, swap the chicken with grilled tofu.

  • The glaze can be made up to 3 days in advance and stored in the fridge.
