Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons olive oil, divided
  • 2 boneless, skinless chicken breasts, diced
  • 1 zucchini, diced
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1 tablespoon soy sauce
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Cook orzo in salted water according to package instructions until al dente. Drain and set aside.

  2. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add diced chicken, season with salt and pepper, and sauté until golden and cooked through, about 6–7 minutes. Remove and set aside.

  3. Add remaining olive oil to the same skillet. Stir in minced garlic and cook for 30 seconds.

  4. Toss in zucchini, red bell pepper, and broccoli. Sauté for 5–6 minutes until veggies are crisp-tender.

  5. Return the chicken to the skillet. Add cooked orzo, lemon zest, lemon juice, and soy sauce.

  6. Toss everything until evenly coated and heated through.

  7. Taste and adjust seasoning. Garnish with chopped parsley if using. Serve warm.

Notes

  • Don’t overcook the orzo—slightly firm texture helps it hold up in the stir fry.

  • For extra brightness, finish with a squeeze of lemon right before serving.

  • You can prep the chicken and chop veggies ahead of time for even quicker meals.
