Description

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 lemon, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted
  • ½ cup crumbled feta cheese
  • ¼ cup red onion, chopped
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  • Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with olive oil.

  • Arrange the chicken breasts in the dish and drizzle with olive oil.

  • Sprinkle oregano, garlic powder, salt, and pepper evenly over the chicken.

  • Layer lemon slices, halved cherry tomatoes, olives, and red onion over and around the chicken.

  • Bake uncovered for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).

  • Remove from the oven, sprinkle with feta, and let rest for 5 minutes.

 

  • Garnish with chopped parsley before serving.

  • You can substitute chicken thighs for a juicier option—just adjust cooking time slightly.

  • Add zucchini, bell peppers, or artichoke hearts for extra veggies.
