Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons extra virgin olive oil
- 1 lemon, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
Pat the chicken breasts dry and place them evenly in the dish.
Drizzle olive oil over the chicken and season with salt, pepper, oregano, and thyme on both sides.
Scatter lemon slices, olives, cherry tomatoes, and minced garlic around and over the chicken breasts.
Evenly sprinkle crumbled feta cheese on top.
Bake uncovered for 25–30 minutes until the chicken is fully cooked and the feta turns golden.
Remove from oven, garnish with fresh parsley, and let the dish rest 5 minutes before serving.
Notes
For juicier chicken, consider using bone-in thighs, but increase cooking time accordingly.
To make it dairy-free, simply omit the feta or substitute with your favorite vegan cheese.
Fresh herbs like basil or dill can be swapped in for parsley for a flavor twist.
