Description

This Roasted Tomato & Burrata Basil Pasta is a cozy-meets-fresh bowl of comfort you’ll want on repeat. Bursting cherry tomatoes, rich garlic, silky burrata, and fresh basil bring summer flavor to your plate in under 40 minutes. It’s easy, elegant, and irresistibly creamy—perfect for busy weeknights or laid-back dinners with friends.


Ingredients

Scale

4 cups cherry tomatoes, halved

3 tablespoons olive oil, divided

Salt and freshly ground black pepper, to taste

3 cloves garlic, minced

12 ounces pasta (spaghetti or linguine recommended)

1 ball burrata cheese (about 8 ounces)

1/4 cup fresh basil leaves, torn

1/4 teaspoon red pepper flakes (optional)

Freshly grated Parmesan cheese, for serving (optional)


Instructions

  • Preheat oven to 400°F (200°C).

  • On a baking sheet, toss the halved cherry tomatoes with 2 tablespoons of olive oil, minced garlic, salt, and black pepper.

  • Roast for 20–25 minutes until the tomatoes are softened and just beginning to caramelize. The aroma is heavenly!

  • While the tomatoes roast, cook pasta in a large pot of salted water until al dente. Reserve 1/2 cup of pasta water, then drain.

  • In a large bowl, toss the warm pasta with the roasted tomatoes and any pan juices. Add the remaining tablespoon of olive oil and splash in pasta water a bit at a time to create a light, silky sauce.

  • Tear the burrata into chunks and scatter over the warm pasta. Let it melt into luscious, creamy pools.

  • Finish with torn basil, a sprinkle of red pepper flakes if using, and Parmesan on top.

 

  • Serve immediately and prepare for smiles all around.

Notes

  • Use whole wheat or gluten-free pasta if preferred.

  • Burrata can be replaced with fresh mozzarella for a milder flavor.

  • Red pepper flakes are optional—but highly recommended for a gentle kick!

  • Make it a full meal by adding roasted zucchini, spinach, or grilled chicken.

 

  • Best enjoyed immediately, but leftovers reheat well with a splash of water or drizzle of olive oil.
