It’s easy to make, requires no yeast, and is perfect for holiday gatherings or cozy weeknight dinners.
Ingredients
For the Flatbread:
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ cup water
2 tablespoons olive oil
1 tablespoon honey (optional, for slight sweetness)
For the Topping:
½ cup fresh cranberries, halved
2 tablespoons olive oil (for brushing)
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
¼ cup crumbled feta cheese (optional, for creaminess)
For the Balsamic Glaze:
¼ cup balsamic vinegar
1 tablespoon honey
Instructions
1️⃣ Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it.
2️⃣ Make the Flatbread Dough
In a medium bowl, whisk together flour, baking powder, and salt.
Add water, olive oil, and honey (if using), mixing until a dough forms.
If the dough is too sticky, add a little more flour; if too dry, add a splash of water.
3️⃣ Roll Out the Dough
Transfer the dough to a floured surface and roll it into a rustic oval, about ¼-inch thick.
Place it on the prepared baking sheet.
4️⃣ Add Toppings
Brush the dough with olive oil.
Evenly scatter the cranberries, rosemary, and thyme.
Sprinkle with feta cheese (if using).
5️⃣ Bake the Flatbread
Bake for 15-20 minutes, until golden brown and slightly crispy on the edges.
6️⃣ Make the Balsamic Glaze
While the flatbread bakes, heat balsamic vinegar and honey in a small saucepan.
Simmer over medium heat for 5-7 minutes, stirring occasionally, until it thickens.
Remove from heat and let it cool slightly.
7️⃣ Finish & Serve
Drizzle the balsamic glaze over the warm flatbread.
Slice and enjoy immediately, garnished with extra fresh herbs if desired.
Notes
Make it extra crispy: Bake directly on a pizza stone for the best texture.
Alternative toppings: Swap feta for goat cheese or add toasted walnuts for extra crunch.
Make-ahead tip: The dough can be prepared up to 24 hours in advance and refrigerated.
No fresh cranberries? Dried cranberries work too—just soak them in warm water for 5 minutes first.
