Ingredients
- For the Whipped Feta:
1 cup crumbled feta cheese
3 oz (about ¼ cup) cream cheese, softened
2 tbsp olive oil
1 garlic clove, minced
1 tbsp lemon juice
Freshly ground black pepper, to taste
- For the Flatbread:
2 flatbreads or naan
1 cup cherry tomatoes, halved
1 tbsp olive oil
1 tsp dried oregano or fresh thyme
Salt and black pepper, to taste
Fresh basil or parsley, for garnish
Instructions
Make the Whipped Feta: In a food processor or blender, combine the feta, cream cheese, olive oil, garlic, lemon juice, and black pepper. Blend until smooth and creamy. Scrape down the sides as needed.
Prep the Tomatoes: Toss the cherry tomato halves with olive oil, oregano, salt, and pepper until evenly coated.
Assemble the Flatbread: Preheat oven to 425°F (220°C). Place flatbreads on a baking sheet. Spread a generous layer of whipped feta on each flatbread. Top with seasoned tomatoes.
Bake: Bake for 10–12 minutes until the flatbread is crisp and the tomatoes are just softened and beginning to caramelize.
Garnish & Serve: Remove from oven and sprinkle with fresh basil or parsley. Slice and serve warm.
Notes
For a spicier version, add a pinch of crushed red pepper flakes or a drizzle of hot honey before baking.
Make the whipped feta up to 5 days in advance and store in an airtight container in the fridge.
Gluten-free flatbreads or dairy-free cheese alternatives can be used to suit dietary needs.
Don’t have a food processor? A hand blender or mashing by hand will still work (just expect a chunkier texture).
